Vegetable Gratin with Red Onion, Tomato and Zucchini

Serves: 6

Ingredients

  • 2 medium red onions, thinly sliced

  • 2 cloves garlic, peeled & crushed

  • 2 large zucchinis, thinly sliced into rounds

  • 4 large vine tomatoes, sliced thinly

  • handful fresh basil, roughly torn

  • 4 tbsp olive oil (plus extra for drizzling)

  • ½ cup Kookakrumb Mediterranean breadcrumbs

  • ¼ cup grated Parmesan

  • 1 tsp dried oregano

  • Salt & freshly ground black pepper to taste

Method

  1. Preheat oven to 190°C. Lightly grease a 19 x 29cm baking dish.

  2. Heat 2 tbsp of the olive oil in a small frying pan over medium heat. Fry the red onion and garlic, stirring frequently, until starting to soften (5-8 minutes).

  3. Arrange zucchini, tomato, and cooked onion & garlic in alternating layers in the baking dish, seasoning each layer lightly with salt & black pepper and torn basil.

  4. Cover with foil and bake for 50 minutes, until vegetables are nearly tender.

  5. Meanwhile, in a small bowl, mix Kookakrumb Mediterranean breadcrumbs with remaining 2 tbsp olive oil, grated Parmesan and oregano.

  6. Sprinkle the breadcrumb mixture evenly over the vegetables. Drizzle with a little extra olive oil.

  7. Return to the oven and bake, uncovered, for a further ten minutes or until the topping is crisp and golden.

  8. Serve warm.

Serving suggestion

  • Serve with grilled chicken, fish, or crusty bread and a green salad.
