Vegetable Gratin with Red Onion, Tomato and Zucchini

Ingredients
2 medium red onions, thinly sliced
2 cloves garlic, peeled & crushed
2 large zucchinis, thinly sliced into rounds
4 large vine tomatoes, sliced thinly
handful fresh basil, roughly torn
4 tbsp olive oil (plus extra for drizzling)
½ cup Kookakrumb Mediterranean breadcrumbs
¼ cup grated Parmesan
1 tsp dried oregano
Salt & freshly ground black pepper to taste
Method
Preheat oven to 190°C. Lightly grease a 19 x 29cm baking dish.
Heat 2 tbsp of the olive oil in a small frying pan over medium heat. Fry the red onion and garlic, stirring frequently, until starting to soften (5-8 minutes).
Arrange zucchini, tomato, and cooked onion & garlic in alternating layers in the baking dish, seasoning each layer lightly with salt & black pepper and torn basil.
Cover with foil and bake for 50 minutes, until vegetables are nearly tender.
Meanwhile, in a small bowl, mix Kookakrumb Mediterranean breadcrumbs with remaining 2 tbsp olive oil, grated Parmesan and oregano.
Sprinkle the breadcrumb mixture evenly over the vegetables. Drizzle with a little extra olive oil.
Return to the oven and bake, uncovered, for a further ten minutes or until the topping is crisp and golden.
Serve warm.

Serve with grilled chicken, fish, or crusty bread and a green salad.
