Quick Crumbed Fish that Kids Will Love!

Serves: 4

Ingredients:

  • 4 pieces of skinned and deboned white fish (gummy shark, baby snapper, or Flathead)

  • 2 cups of Herb and Garlic Kookakrumb Breadcrumbs

  • 2 eggs, lightly beaten

  • 1/2 cup of plain flour

  • pinch of salt and pepper

  • 25g of butter

  • 1 tbsp of oil

Method

  1. Preheat oven to 200 °C.

  2. Set out egg, flour and Kookakrumb breadcrumbs in separate shallow bowls. Add pinch of salt and pepper to flour.

  3. Dip fish into the flour, then into the egg allowing excess to drip off and then into the Herb and Garlic breadcrumbs. Push crumb onto fish lightly to ensure the piece is well coated.

  4. Place a large frypan over medium heat and melt the butter and oil together.

  5. Wait till butter is hot, but do not let it burn. Test if its ready by dropping a bit of breadcrumb into the pan, if it sizzles it is ready.

  6. Place fish into pan and cook until golden on both sides, about 2 minutes each side.

  7. Place fish onto a plate with paper towel to drain excess oil.

  8. Serve.
