Crunchy Herb and Garlic Chicken Schnitzel

This is a great simple recipe that can turn an average chicken meal into a gourmet delight!

  • 4 x 125g skinless, boneless chicken breasts

  • Herb and Garlic Kookakrumb breadcrumbs

  • 1 teaspoon garlic granules or garlic powder

  • 4 tablespoons of flour

  • 2 eggs

  • 2 tablespoons Vegetable oil or olive oil

  • Your choice of steamed veggies or salad


Place flour in a bowl and egg in another bowl and lightly whisk the eggs, then add a decent amount of breadcrumbs to a separate plate or bowl (don’t add too much as it will go to waist you can add more crumbs as you go). Dust chicken lightly in the flour then dip into the egg mix, then firmly press down the breadcrumbs until the chicken is firmly coated.

Heat the cooking oil in a medium sized fry-pan over medium heat. Test to see if oil is ready by throwing in a little bit of crumbs and see if they sizzle. Once the crumbs sizzles reduce the heat to LOW and place the chicken into the oil and cook for 8 minutes, then turn over and continue to cook for another 8 minutes. Place on a plate with paper towel to remove excess oil then serve with your desire vegetables!
